How our services run around a working kitchen

A kitchen can't stop for a truck. The routes are built around that: early, bundled, and done before you open.

  1. Before the doors open
    Trap routes run in the morning. The interceptor is empty and manifested before the kitchen preps lunch.
  2. Trap and oil, same visit
    Most kitchens pair trap cleaning with the oil pickup. Same visit, same truck, one less interruption.
  3. Sized to the kitchen
    We size the cycle off what we pull out on the first two visits. A busy fry line runs weekly or every two weeks; a coffee counter runs 90 days.
  4. When a line backs up mid-service
    Call dispatch and say what's backing up. There's always someone on call.

When the inspector shows up

An inspector wants to see records. Every job we run comes back with a dated manifest naming the location, the trap, and the hauler. Keep them in the binder and the visit is short.

  • We are the licensed hauler, so the chain of custody stops with us.
  • The one-quarter rule sets the schedule: a trap stops separating once it's 25% full.
  • Service history stays on file. Ask and we send the last twelve months.
  • Trap waste and oil go to our own transfer station in Long Island City.
